Apple & Sunflower Greens Salad
This salad is so easy, and it does not have any added sugar or sweetener, as the apple does that job. I love adding diced fruit to salad, as well as nuts and seeds, to add some crunch. Salads have come a long way, haven't they? I paired this with some tofu. This salad is a great accompaniment to any protein or meal.
2 cups Arugula
2 oz Sunflower Microgreens
2 oz House Salad Microgreens Mix
1/2 honeycrisp apple, diced
1 tbsp pepitas
1 tbsp hemp seeds
Juice of 1 lemon
Drizzle of Extra Virgin Olive Oil
1 tsp cumin powder (optional)
Salt & Pepper
Add all the ingredients to a bowl. In a separate bowl add all the dressing ingredients and whisk them. Taste the dressing before pouring it on to the salad.
Serve with your choice of protein!
