Sunflower Microgreens & White Bean Dip
Sunflower Microgreens have a unique, nutty flavor and are an increasingly popular ingredient in pesto!
They’re also one of the best plant protein sources. A 3 oz/ 100 gram serving of sunflower microgreens contains 25 grams of plant protein!
Combine that with a can of beans that contains between 6-8 grams of protein, you now have an easy protein rich dip and spread to use in a variety of ways.
They're a great option for people with nut allergies as sunflower microgreens give you that nutty flavor without any nut ingredients!
This versatile dip can be eaten with veggies, as a spread on toast, on pizza, as a dip with chips, or quesadillas.
You will need:
1 and 1/2 cups sunflower microgreens
1 - 15oz can drained & rinsed white beans
2 garlic cloves, minced
Zest from 1/2 a lemon
1/4 tsp red pepper flakes
2 tsp salt & 1 tsp cracked black pepper
1 tsp fresh chopped rosemary
2 tablespoons extra virgin olive oil
Juice from 1/2 lemon
1/4 tsp smoked paprika
Pulse all ingredients together in a food processor until it reaches a smooth consistency. Taste for seasoning and add more salt & pepper, or olive oil if needed!
Serve with crudités & pita bread. Top with a swirl of extra virgin olive oil & a few red pepper flakes.
Did we mention that sunflower microgreens are a high quality protein? They are a complete source of protein, which means they contain all of the necessary amino acids your body needs!
